Satay at Home: The Starter Kit for Real Skewers and Peanut Sauce

Satay is the smell of a Malaysian night market — charcoal smoke, turmeric, and that peanut sauce you want to drink. It looks intimidating and it absolutely is not. With a handful of pantry items and a hot grill (or even a grill pan), you can put out skewers that make people go quiet mid-conversation.

Here's the starter kit.

The skewers

Bamboo skewers, soaked so they don't burn to ash.

Soak them in water at least 30 minutes before grilling. Buy the long ones — short skewers cook your knuckles.

The marinade shortcut

Authentic satay marinade is turmeric, lemongrass, galangal, shallots, and coriander pounded together. You can do that (and it's wonderful), or you can start with a good paste and build from there.

A solid base. Bloom it with a little oil, add sugar and a splash of coconut milk, and marinate chicken thigh or beef for a few hours. Thigh, not breast — trust me, breast dries out over fire.

Ground coriander and turmeric are the two spices that make it taste like satay, so keep them stocked:

The peanut sauce (the real star)

Nobody will admit it, but people come for the sauce. You can make it from scratch, or start with a proper satay peanut sauce base and doctor it.

Loosen it with coconut milk and a spoon of the marinade paste, simmer, then balance with tamarind (sour), palm sugar (sweet), and salt until it sings. Crunchy roasted peanuts stirred in at the end give it texture.

The grill

Charcoal is traditional and unbeatable, but a heavy cast-iron grill pan gets you shockingly close indoors.

Get it screaming hot, oil the skewers not the pan, and don't fuss them — let the char set before you turn.

Serve it right

Satay comes with ketupat (compressed rice cakes), cucumber, and raw onion, all dunked in that peanut sauce. Even without ketupat, plain jasmine rice and a cucumber salad make it a full meal.

Master this and you've basically got a party trick for life. Pair it with a batch of nasi goreng and you're running your own mamak stall.
